Just as a start, these past few weeks have been sort of difficult in my weight loss realm. I’ve had to deal with a lot of self doubt, a crazy plateau that came out of nowhere, really crappy eating (I just didn’t log, or time my eating, or measure, or plan well like I normally do, and I went though a period of time last week where I was just vacant. I was angry at going to the gym because of my bad experience with a personal trainer, and I was at the gym, but I knew I wasn’t trying as hard as I could. I’m back though, and I feel better. This is where I am now:
I got to bust out the biker shorts. I actually don’t look too bad in them!
Anyhow, the recipe: I was thinking about how bacon is just meat, it’s just thinly sliced meat. I’d always stuck bacon in the oven and just baked it out, or fried it in a pan. I never thought to season it or make it taste different than it’s normal salty deliciousness. That’s the great thing about having this blog. It forces me to think of food differently. I’m giving myself the challenge to eat better, but to also enjoy what I’m eating too. That’s probably why I haven’t lost a million pounds in 6 months. I’ve just been taking it slow, eating what I like, but trying to make it healthier, and eat less of it.
This morning I made bacon, but I seasoned with with cinnamon, ancho chile powder, sea salt and ground cumin. It was probably one of the best ways I’ve ever perked up breakfast. The outcome? Sweet, salty, crunchy bacon with a beautiful color. I served it with eggs over easy with spinach and lime, and some peach yogurt.
