I’m really back | Vietnamese Banh Mi Sandwiches

So last week, I didn’t have the most shining moment, given the fact that I was just having a terrible time re-setting on my goals. Typically I work out 5 times per week, with 2 or three of those days being dual workout days (morning, AND afternoon workouts), I only did 3, but I believe it’s a good start. This week I’m getting evaluated by a personal trainer, and I know I’ll get a jump start on getting back to normal. It’s all going to be okay. I did start taking vitamins consistently, and I do have to say that I don’t feel much better to be honest. I feel just about the same.

Onto the food: This week I didn’t know what I wanted to eat. I knew that I was going to make a soup (which I did, tomato basil!) But I didn’t know what else for the rest of the week. I picked up a baguette at the store because I really like dipping crusty bread into soup, it’s just so good! I’m going to attempt my own bread one of these days. I’ll never have to buy anything but ingredients soon!

When I got home, I knew I didn’t want to make, or eat soup, so I searched around the fridge and I had every ingredient to make a Bahn Mi Sandwich except for daikons! I was super excited.

If you’ve never had a Banh Mi sandwich, I suggest you find the nearest Vietnamese sandwich shop in your area, and indulge. They’re probably one of my favorite bites, and they’re always really amazing . I didn’t make mine as traditional as I would’ve liked (I didn’t have daikons, nor did mayo touch this sandwich), but I liked my interpretation of it, and It’s definitely going to be the sandwich of choice at my house.
