Coconut Milk Rice

Description

Easy jasmine rice with just a few ingredients. 


Ingredients

Units Scale
  • 1 cup of jasmine rice
  • a pinch of salt
  • 1213 ounces of full-fat coconut milk
  • 1/2 cup water


Instructions

  1. First, rinse 1 cup of rice in a sieve or strainer until the water runs clear.
  2. Then pour your washed rice into your saucepan, and top with 12 oz coconut milk, ½ cup water, and a pinch of salt.
  3. Make sure to break up any lumps in the coconut milk before heating.
  4. Then, cook the rice on high heat until the mixture starts to boil.
  5. Once it comes to a rolling boil, turn the heat down to low, and cover, while leaving a little opening on the top of the pan (so it doesn’t boil over).
  6. Cook on low heat for 15 minutes, until rice is tender and completely steamed.

  7. Fluff it and enjoy.

Notes

  • Lime is an amazing addition to this rice if you want a bit of citrus flavor. 
  • Feel free to adjust the salt content for your preferences. 
  • I also love cilantro as a garnish for this rice
