Description

Make a decadent, diabetes-friendly snack that is packed with protein, fiber, and vitamins – the perfect treat for anyone trying to manage their blood sugar levels.

Ingredients

Units Scale
  • 1.5 tablespoons of sugar-free chocolate chips
  • 1/4 teaspoon of coconut oil
  • 5 ounces of plain Greek yogurt
  • 4 fresh strawberries, sliced
  • 1 scoop Vital Proteins Plain Collagen Peptides (or a protein powder that dissolves well).
  • Sea Salt for the top (optional)

Instructions

  1. In a heat-safe dish, melt the coconut oil and chocolate chips in the microwave. Microwave for 30 seconds, stop and stir, and microwave for 30 more seconds. Set aside.
  2. In your yogurt cup, mix the Greek yogurt and collagen peptides thoroughly until the collagen is dissolved, and there’s no trace of any clumps or powder.
  3. Add in your sliced strawberries and mix them in with the yogurt.
  4. Pour chocolate sauce over the top of the mixture.
  5. Freeze the cups for 15 minutes.
  6. Remove the cups from the freezer, grab a spoon, crack the top and enjoy!

Notes

  • I use plain greek yogurt for this recipe. You could use a flavored yogurt, but it may add carbs. Be sure to read labels. Plain Greek yogurt is your best bet.
  • For sugar-free chocolate chips, I recommend either ChocZero or Lily’s.
