Description
Dinner rolls to go with your supper plate. I love these rolls, as they have a soft inside, and have the texture of cornbread.
Ingredients
For the dough
- 3 tablespoons lukewarm water
- 1 tablespoon active dry yeast
- 1/3 cup of heavy cream
- 1 tablespoon apple cider vinegar
- 2 1/3 cups almond flour
- 1 tablespoon psyllium husk powder
- 5 tablespoons unflavored whey protein isolate
- 1 teaspoon xanthan gum
- 2 1/2 teaspoons baking powder
- 1 1/2 teaspoons kosher salt
- 3 large eggs
- 1 1/2 tablespoons unsalted melted butter + extra for the top, or insides of your rolls.
- 1 tablespoon of onion powder
- 1 tablespoon of garlic powder
Instructions
How to make keto dinner rolls

Your first step is to activate the yeast. If you’re using active dry yeast, just add 3 tablespoons warm water, and set it aside in a warm place for 7-10 minutes. Once you see bubbling it’s ready, and you can add in your egg, heavy whipping cream, and apple cider vinegar, and stir into a creamy mixture. Set this aside. Note: this could take longer for your yeast.
In another bowl, add together your almond flour, whey protein isolate, salt, xanthan gum, and baking powder and seasionings.
Stir these together until they are well blended and mixed together.
When your yeast mixture is ready, you’ll add the wet ingredients to the dry. and mix thoroughly until it forms a dough. You can do this with the dough hook attachment on your stand mixer, or use a spatula to hand mix.

Your dough should come out light and airy. You’re going to set it aside to let it rise for an hour. It’s not going to double in size, but it will get a bit puffy as it rests. Leave it somewhere warm so it will expand a bit better.
Preheat your oven to 400 degrees.
Butter your pie dish (I used a 9″ pan) and place your sliced rolls in tightly.
After resting, you’re going to roll the dough into balls.
Then it’s off to the oven to bake at 400 degrees for 20-25 minutes!
Check on them halfway through – poke a knife into the middle, if it comes out clean, they’re done.
Take out and enjoy with a little butter.
Notes
- These get brown very fast, so be sure to watch them in the oven. You don’t want them to burn on the bottom. You can put tin foil over the top once they become golden in the oven, and cook the rest of the way.
- Make sure to check them at half-time. Depending on the temp of your oven, and the size of your rolls they may get finished faster than 20-25 minutes.
- These can be refrigerated for up to 1 week.
