Mango Pico de Gallo

This sweet and savory mango Pico hits the spot and pairs perfectly with my favorite mango rosemary margarita!


Units Scale
  • 1 large mango, ripened, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/2 red bell pepper, chopped
  • Juice of 1 lime
  • 1 ounce, Mango Simple Syrup


  1. In a medium-sized bowl, add diced mango, red onion, lime juice, cilantro, and red pepper.
  2. Drizzle one tablespoon of mango simple syrup on top and toss the Pico to combine all ingredients.
  3. Then, mix everything together to let the flavors meld and chill in the fridge for 20 minutes.
  4. Serve chilled, and enjoy!


  • You can scoop it up with tortilla chips, or eat it by a spoonful. I also LOVE this Pico on fish like salmon or cod.
