Massaged Kale salad with goat cheese and pomegranates

Many people say they don’t like kale because it’s too tough or chewy, but giving it a little massage actually helps break down the fibers in the kale to make it more tender for a salad.

We’ll give it a go in this video, and add some delicious pomegranate arils and goat cheese to our salad. I’ll also show you how to make a tangy homemade dressing, and we’ll talk through some tips about cooking with diabetes.
