Bryan and I have run pretty low on groceries this week, and our pantry is empty. This morning after we worked out, we tried to find something easy and yummy to make.

We had bread, eggs, and avocado, and realized we could have a simple, but delicious breakfast.

I know toasts are kind of over now, but this filled us, and made us feel good after our sweat sesh at the gym! Check out the recipe below, and don’t forget to subscribe to my vlog channel!

Avocado Breakfast Toast

Description

An easy avocado toast


Ingredients

Scale
  • 1 Avocado
  • 2 eggs
  • 2 slices of toast
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 teaspoon of olive oil


Instructions

For Toast

Brush slices of toast with olive oil. Either place bread in your toaster, or toast the bread in the oven.

For Eggs

Place two cold eggs into 2 quarts of water. bring the water to a rolling boil, and boil for one minute. Turn the stove off and cover the pot. Let steam for 5 minutes (for runny yolk) 7 minutes (for custardy yolk) or 8 minutes for fully cooked, but creamy yolk.

  1. This is pretty much a whole lot of my favorite things rolled into one! I love avocado and hooray for eggs! :]! I need to see if I can score some not-too-astronomically-priced avocados so I can make this! *-*
