I'm a big steak food gal and so this recipe is one of my favorites. The steak fajita salad is a great choice for someone with diabetes because it's full of fresh veggies, the marinated steak is so delicious, and it's quick to make with just a few ingredients.
Kale Caprese Salad
The original Caprese salad recipe comes from Naples and it has been around since 17th century Italy when tomatoes were first introduced into Europe.
I turned mine into a full salad and a beautiful starter for any meal.
Chopped Kale Salad Recipe
A chopped salad is a quick and healthy way to eat when you're in a hurry, or when you don't want to spend time cooking. It's also great for people with diabetes because the ingredients are low-glycemic and won't spike your sugar levels.
The best part? Chopped salads can be made up of whatever veggies you have on hand: cabbage, carrots, tomatoes, onions or peppers. You'll never get bored of eating the same thing! They're so easy to make too; just chop everything up into small pieces and toss it together with some dressing (ranch is one of my favorites). That's all there is to it!
Massaged Kale salad with goat cheese and pomegranates
Goat cheese and pomegranate are a perfect combination for salads because of the sweet/savory combination.
In case you didn't know, goat cheese is low in fat, high in calcium and tastes delicious. Goat cheese is also an excellent source of protein; one ounce of plain, soft goat cheese can provide up to 5 grams!
Pomegranates are rich in antioxidants which help prevent cell damage caused by free radicals like toxins or pollution. They also contain vitamin C.
Strawberry Goat Cheese and Mint Kale Salad
Goat cheese makes another appearance here in my Strawberry, Goat Cheese and Mint Kale salad.
It's a delicious and refreshing salad with those sweet and savory notes again. If you can find strawberries, this salad is absolutely incredible.
Brussels Sprouts, Butternut Squash, Bacon Salad.
Brussels Sprouts, Butternut Squash and bacon is a perfect side dish for any meal. You can make it as an appetizer or an entree. It's also nutritious because of the vitamins that are found in the ingredients. Brussels sprouts are packed with beta-carotene which is converted to vitamin A. Vitamin A is important for eye health, immune system function, cell growth, skin health and more!
They're also high in folate which helps stimulate metabolism and maintain serotonin levels in your brain. Butternuts squash is very high in fiber so it's good for digestion and cholesterol levels.
Bacon on the other hand provides protein which helps keep you full longer!.
Salmon Caesar Salad
Salmon is a low-fat fish that has been shown to be very healthy for people with diabetes. It's also high in omega 3 fatty acids which help keep your cholesterol levels in check. Salmon is a great source of protein, vitamins and minerals that your body needs to function properly and it can be a tasty addition to a diabetes diet.
